Egusi Soup🍅

Here’s a very easy recipe for Egusi Soup ,just follow the steps below.

🍅Season some meat with salt,seasoning cubes and onions

🍅Then steam,you can use any meat of choice, goat meat,beef,chicken etc

🍅Wash the stock fish and dried fish in hot water,you can soak it for a few minutes before washing

🍅Steam the stock fish first

🍅When the meat is tender,turn off the heat and set it aside

🍅Pick out the bones from the stock and dried fish

🍅Grind the locust beans,crayfish and egusi together

🍅Get some chilli peppers and tomatoes ready
🍅Grind with very little water

🍅Wash and chop some spinach (you can also use ugu leaves etc)

🍅Get your palm oil ready

🍅Heat up the palm oil
🍅Add onions and the tomato /pepper

🍅Add the ground egusi,locust beans and crayfish

🍅Stir for a few minutes

🍅Add the meat and the stock

🍅Add the stock and dried fish
🍅Bring to a boil
🍅Stir at intervals to make sure it doesn’t burn
🍅Cook for about 15 minutes
