๐Ÿ…To make this you’ll be needing some meat;

๐Ÿ…You can use beef,chicken,turkey goat meat or even fish.

๐Ÿ…To season the meat you need :
๐Ÿ…Salt
๐Ÿ…Ginger
๐Ÿ…Thyme
๐Ÿ…Curry
๐Ÿ…Rosemary
๐Ÿ…Coriander
๐Ÿ…Onions
๐Ÿ…Stock cube

๐Ÿ…Add some water and steam

๐Ÿ…Separate the steamed meat from the stock

๐Ÿ…Wash your rice in hot water and rinse with cold water

 ๐Ÿ…Then strain

๐Ÿ…The stew ingredients :
๐Ÿ…Fresh Tomatoes/Tomatoe paste
๐Ÿ…Paprika
๐Ÿ…Chilli peppers
๐Ÿ…Onions 
๐Ÿ…Bay leaves

๐Ÿ… Rosemary
๐Ÿ…Fresh basil or Curry leaves
๐Ÿ…Stock cube
๐Ÿ…Salt
๐Ÿ…Vegetable oil

๐Ÿ…Slice the tomatoes,paprika and peppers
๐Ÿ…Cook
๐Ÿ…Then blend
๐Ÿ…It’s the best way to avoid cooking tomatoes longer than it should take in a bid to reduce the water

๐Ÿ…Heat up some oil

๐Ÿ…Add the onions

๐Ÿ… Basil leaves

๐Ÿ…Add Rosemary

๐Ÿ… Add bay leaves

๐Ÿ… Salt

๐Ÿ… Seasoning cube

๐Ÿ…Then the tomatoes

๐Ÿ…You don’t need it if you have enough puree from the fresh tomatoes and Paprika

๐Ÿ…Add the meat stock,

๐Ÿ…This is the most important stage when cooking jollof rice.I personally think this stage determines whether the rice will be delicious or not.Here you add whatever you think  isnt sufficient. eg.seasoning cubes,salt,pepper etc. If you add any ingredient at this point make sure you bring it to a boil before tasting

๐Ÿ…Add some more water for steaming..You might be adding more water as the rice cooks so do not add so much
๐Ÿ…Taste for salt and pepper
๐Ÿ…Jollof rice tends to burn quickly
๐Ÿ‘‚To avoid this don’t stir until it has cooked through
๐Ÿ‘‚you can know this by picking some grains with a fork and chewing

๐Ÿ…It should look like this when it starts cooking. Pick some grains after about 15-20 minutes to check if it’s done. If it isn’t ,add a small amout of water,and let it steam.

๐Ÿ…When it’s soft and you’re sure it’s absorbed all the water,stir from bottom to top and taste for salt and pepper.
