Lemon Cake🍋

🍰Ingredients:
🍋300 gr All purpose flour
🍋170 gr Butter
🍋170 gr Sugar
🍋8 medium eggs or 6 large eggs
🍋1 lemon
🍋20 gr Baking powder
🍋1/2 teaspoon salt
🍋Lemon Essence
🍋Dried lemon cubes (optional)

🍋Sift the flour

🍋Add baking powder

🍋Add salt
🍋Set the dry ingredients aside

🍋In a bowl ,add butter and sugar

🍋Using a wooden spatula, cream until smooth

🍋Or use a cake mixer if you have one
🍋Cream butter and sugar for 15 minutes

🍋Crack the eggs
🍋Squeeze the lemon

🍋Add the eggs and dry ingredients in bits

🍋When the ingredients are well incorporated ,add the:
🍋Lemon juice
🍋Lemon essence
🍋Dried lemon cubes

🍋Grease your cake/loaf pan with some butter and sprinkle some flour ,this helps the cake come off easily from the pan after it’s baked

🍋Pour in the cake batter

🍋Bake in the oven at 180°C for 50 minutes.
🍋Don’t forget this recipe is for 300 grams of flour , If you’re baking more than 300 grams you might have to bake it longer than 50 minutes.
🍋Do not open the oven within these minutes. After 50 minutes,open the oven and stick in a skewer or a knife,if it comes out smooth,then your cake is baked. If it comes out with sticky batter close the oven and let it bake for some more minutes.

🍋After 50 minutes 👌
🍋Place on a rack or on a parchment paper and allow it to cool

  2. Good day, thanks for sharing this recipe. Pls how do I get the dried lemon cubes? And you didn’t specify the quantity of lemon essence to add. Thanks in anticipation of your reply.

    1. Hi Praise,The lemon cubes were store bought,I honestly do not know how to make it at home. Baking essence and flavours aren’t all the same,some are really concentrated and stronger,in this case you can use 3-5 drops like I did for this recipe and it was enough. I use Dr. Oetker, however Clarks isn’t as strong as Dr. Oetker so I recommend 1 tablespoon, assuming you’ll be using Clarks. What I’m trying to say is,know the strength of your essence/flavour it will help you determine how much to add to your batter 😘
