Nkwobi🍖

Nkwobi is a delicious traditional dish belonging to the Igbo people of Nigeria.  It is a well known dish which is on almost every menu both at restaurants and fast food joints. It is made with meats and sometimes a bit of oil bean seed is added to give it a unique taste. My recipe is a combination of both,it is always the talk of every party 😉 I got a few requests from people who complained that they pay so much money to purchase a plate of Nkwobi, and in the end it’s never worth it. Follow my steps and you could start up your own ‘Nkwobi joint’ 😆Recipe below👇

 

🍃Ingredients
🍅Cow foot/Goat meat/Cow skin
🍅Ugba/Ukpaka/Oil bean seed
🍅Crayfish
🍅Calabash nutmegs/Ehuru
🍅Fresh or dried pepper
🍅Salt
🍅Seasoning cube
🍅Utazi leaves (dried or fresh )
🍅Palm oil
🍅Onions
🍅Edible potash/Akanwu/Ntu

🍅Season the meat with stock cubes    and salt

🍅Slice in some onions

🍅Cook until tender

🍅While the meat cooks,steam the oil bean seed and set aside (keep it warm)

🍅Make sure the meat doesn’t absorb all the stock, you’ll be needing some meat stock later

🍅Cut the meat into smaller pieces
🍅Get rid of the bones
🍅Keep the meat and the stock warm

🍅Grind the crayfish and calabash nutmegs

🍅Measure out a tablespoon of the edible potash

🍅It usually comes in moulds but it will be easier if you use a stone to grind yours to powder.

🍅Dissolve in about 50-60 ml water

🍅Get a mortar and wooden spoon ready

🍅Or a bowl and a wooden spatula

🍅Or a clay pot

🍅Place a sac cloth or kitchen towel over the bowl/mortar

🍅Pour in the potash mixture

🍅Squeeze

image

🍅Add palm oil

image

🍅Stir

image

🍅Add a bit more palm oil if the first isn’t sufficient

🍅Add the meat

🍅Stir

🍅Add the oil bean seed/Ugba

🍅Stir

image

🍅After adding the Ugba you might notice the mixture is becoming dry

🍅Add some warm meat stock

🍅Add the ground crayfish and calabash nutmegs/ehuru

🍅Taste

🍅If you feel it requires more salt and seasoning cube,add some

🍅Add some pepper

🍅Finally add some utazi leaves
