Mackerel stuffed doughnuts 🐟🍩

Ingredients
.

600 grams pastry flour
.
100 grams sugar
.
1 table spoon of pure vanilla extract
.
1 levelled teaspoon nutmeg
.
1/2 teaspoon of salt
.
2 eggs
.
200 ml water
.
40 grams butter or margarine
.
2 levelled table spoons of yeast
.
2 tablespoons of powdered milk
.
Mackerel or tuna for filling
.
Optional ingredients
.
Scotch bonnet pepper
.
Onion

Steps
.
In a clean bowl , combine flour, sugar, powdered milk, nutmeg, and salt, set aside.

Crack 2 eggs, beat together with the vanilla extract
.

Heat up 200 ml water and add the butter/margarine, stir till it dissolves. Allow to cool, add the yeast and whisk with a fork(while the water is still warm).

Combine eggs and yeast mixture with the flour and mix till a dough is formed.
.
Sprinkle some flour on a clean board and knead the dough till it’s smooth.
.
Grease a pan, place the dough in the pan and cover with cling film.
.
Place in a warm place and allow to rise for 45 minutes.
.
Sprinkle some more flour on your work top, section the dough and flatten each one, place some mashed fish on top and gently hold up the edges, press hard to close,then shape into a disc.

Place each one on a floured baking sheet to prevent sticking. Cover again and allow to rise for just 10 minutes, if it stays longer, the dough will be too elastic when you try to pick them.

After 10 minutes, deep fry over medium heat till each side is golden brown.
